Pavakka/Kaypakka Thoran / Bitter Gourd Stir Fry

Ingredients :
Bitter gourd :2nos/250 grms (medium sized)
Turmeric powder :1/4tsp
Garlic :5-8 cloves (crushed)
Shallots :5-8nos (thinly sliced)
Crushed red chilli flakes :11/2tsp or according to ur spice level
Curry leaves :1 sprig
Salt to taste
Oil for frying

Method of Preparation :
1.Slice the bitter gourd into half length wise as thin as you can get.
2.In a non-stick pan heat oil and add curry leaves,sliced shallots,crushed garlic and saute till light brown in color.
3.Add crushed red chilli flakes,turmeric powder and salt and mix.
4.Add sliced pavakka and combine well with the masala.
5.Reduce heat to a very low fire and cover & cook the pavakka(give a stir in between).
6.Add a little more oil and fry the pavakka till light brown in colour.
7.Serve with rice as side dish.
