Peaches And Cream Bread Pudding

Bread Pudding




1 loaf French bread, cubed (abt 8 cups)

1 pint table cream

2 c milk

1 stick unsalted butter

2/3 c splenda

6 eggs

4 tsp cinnamon

2 tsp vanilla

1 29 oz. can peaches in juice or water


Sauce


2 c milk

4 Tbsp unsalted butter

2/3 c splenda

2 tsp vanilla

2 Tbsp flour

Dash of salt



Bread Pudding

In a large saucepan heat cream and milk on med. heat until steaming. Add in butter and stir until melted. Remove from heat and add in peaches. Let stand to cool until lukewarm.




Cube French bread and place in a lightly greased 9 x 13 inch casserole dish. I leave mine in larger cubes, I don?t think it really matters what the size is.IMG_1008


In a large bowl combine Splenda OR sugar, eggs, cinnamon, and vanilla. Beat until well combined. Slowly stir in milk and peach mixture.


Carefully add milk mixture to the bread cubes. I use a ladle to cut down on the mess I make. It also helps to distribute the peaches evenly. After you have all liquid onto the bread cubes carefully press down with the back of a spoon to make sure everything is soaking in the mixture.


Bake at 350° for 60-70 minutes or until set. It will look like it is blowing up in the oven. It will raise above the height of the dish. Don?t worry, after you remove it from the oven it will deflate and settle. Cooking time may vary as I am at a high elevation.


After you remove it from the oven set aside while you make sauce.IMG_1016


In a medium saucepan combine milk, butter, splenda OR sugar, vanilla flour and salt. Stir with a whisk until completely combined and butter is melted.


Cook on medium heat until it comes to a boil, stirring almost constantly. Lower heat and continue to cook for 3 ?5 minutes, stirring constantly.



Carefully pour or spoon over bread pudding. Serve warm. ENJOY!IMG_1019
