Peanut Butter Rice Balls
One of my sons, Griffin, has several food allergies including corn. Before we discovered his corn allergy, I had been making peanut butter popcorn for lunch once a week. I loved making it because it is easy and thrifty. The kids loved it because it is fun and different.
Once we struck corn off the menu, the kids were sad they could no longer have peanut butter popcorn for lunch. Since then, I have been trying to figure out something similar. What I came up with is peanut butter rice balls. It's also thrifty, fun and different and the kids love it! The recipe makes a whole lot. I haven't counted how many balls, but my kids eat 4 or 5 each at lunch and the batch lasts 3 or 4 lunches. How's that for vague? :) 2 cups cooked brown rice 1/2 cup peanut butter (we really like the 365 brand) 3 Tbsp honey 3 Tbsp coconut oil, melted 4 pinches of salt 2 pinches (or little, tiny scoopers) of pure stevia powder 1/2 cup shredded coconut 1/2 cup raisins 1/2 cup carob (or chocolate) chips Combine all ingredients. Roll into 1" balls and place on parchment or wax paper lined cookie sheet. Chill in fridge for a couple of hours. You could add any kind of nuts or whatever dried fruit you have on hand. I want to experiment with processing the rice with dates. I'll report back the results when I have. This would also be a great way to use up some leftover rice. related searches : Peanut
