Peanut Rice!!

Since my childhood I just love rice.....doesn't matter if it's  plain,fried, pulav or biryani...and very lucky that my family loves it too...may be because I am bit lazy too make many chapattis, so always have addition of rice plate to our meal...I made this peanut rice months back,recipe was sitting on my doc. So I thought I better give trial to this one, and you guys you give your joyful verdicts!!

 
You will need:-

 
2 cup cooked rice-each grain should be saprated

 1/2 cup Peanuts-roasted and dehusked totally

 Salt to taste

11/2 tsp red chilli powder

1tsp cumin seeds

4-5 curry leaves

2 tbsp Peanut oil(use any)

3-4 green chillies-cut length wise

hand ful of more peanuts and cashew nuts

1/2 tsp tumeric powder

pinch of hing(Asafoetida)

Method:-

In a grinder grind roasted peanuts untill powder, now add red chilli powder and salt and mix once more. Add the powder and tumeric powder in to the cooked rice. Mix well and leave it for 10 minutes to rest. Heat oil in a heavy bottom pan and add cumin seeds, let it spultter and add hing. Now add peanuts and cashew nuts, fry them on a very low heat untill light golden brown. Now add curry leaves green chillies. Fry for few minutes and now add rice. Gently mix well. Ready to serve. Great with any type of Raita or just plain Yogurt.
