Peanuts Coconut Cornflakes Slice

By Keep Learning Keep Smiling (Visit website)

Peanuts coconut cornflakes slice

Peanuts coconut cornflakes slice

I must say I really like this slice for 2 main reasons. Firstly, all you need to do is melt, mix and press into a tin…..no baking needed. That’s fast and fun. Secondly, all my favourite ingredients are in this slice….coconut, peanuts and cornflakes. You just can’t go wrong with this slice. If you are lucky like me who am not allergic to peanuts, I believe you will enjoy this slice.

This is a big tray because I made to share with friends. They liked it. My only mistake was I didn’t chill it long enough before cutting so it was a little crumbly. I was a little impatient…couldn’t wait to try it! Am I the only one? I bet I’m not. Anyway, here’s my simple recipe to share.

Ingredients A (base)

250g butter (melted)

500g biscuit crumbs (any sweet biscuits)

Mix well and press it into a paper-lined shallow tin. Chill in the fridge for a while.

Ingredients B (topping)

60g butter

1/2C peanut butter

1/2C golden syrup

1/2C honey

1/4C sugar

6C cornflakes (crushed coarsely)

1C desiccated coconut

1/2C raisins

1/2C roasted peanuts (finely crushed)

Combine butter, peanut butter, honey and golden syrup in a pot. Add all the rest of the other ingredients. Mix it well and pour it on top of the base above. Press it down and leave to chill until set before cutting.

“History has demonstrated that the most notable winners usually encountered heartbreaking obstacles before they triumphed. They won because they refused to become discouraged by their defeats.”
