
After the Moroccan Lamb we wanted something quite light this evening. It didn’t really work out like that but wasn’t that bad.
I wanted to make Pesto, but anyone who has ever tried to find fresh Basil on the Isle of Wight in December may sympathise with my plight (I couldnt be bothered to cruise over to Waitrose) and so, despite very kindly being offered spinach instead… I turned my razor sharp mind in another direction.
Spinach gave me an idea, and so I returned and probably made that person’s day by buying her spinach off her (I hope she went home that night and tried making spinach pesto !!) together with some Gorgonzola cheese and a packet of walnuts.
Melted the Gorgonzola in some milk, and wilted down the spinach in the sauce. Added some walnuts, and some Greek Yoghurt to bulk it out a little, and served it with some penne.
Very good it was too….though once again on account of being quite unable to get my phone to download photos (and both my cameras are being repaired!) have had to filch a photo off the net. Mine was somewhat saucier!
