Pineapple Fried Rice
When I came across a ripe pineapple during my shopping trips, I could not resist buying one as I had been looking for an occasion to make a pineapple fried rice. The dish, due to the presence of pineapple will give a sweet at the same time tangy taste - much different from the conventional fried rice. I have tasted pineapple fried rice in Malaysia, where the dish is served in a carved pineapple . While not being that adventurous I had prepared the dish in my own way. Pineapple Fried Rice Ingredients 1 cup cooked and cooled rice ( preferably basmati ) 2 teaspoon oil 1 onion, finely chopped 1/2 cup ripe pineapple, cut into 1/4 - inch pieces 1 capsicum, diced 1 tablespoon raisins 1/2 teaspoon salt ( or to taste ) Method Heat oil in a pan. Fry chopped onions till golden color.
Add pineapple pieces, raisins and capsicum. Mix well. Add cooked rice and salt to taste. Mix well gently. Cover with a lid and cook on a low heat for 10 minutes. Serve hot with vegetarian or non vegetarian dish of your choice. related searches : Pineapple
