Pizza, for the "big game" (not talkin' about elk here)
With the "big game" approaching, there is sometimes the dilemma of what to make or what to take to a "big game party". The usual fare would surely be hazardous to the waistline. Veggie trays only hold so much appeal when surrounded by chips, dips, queso, nachos and pizza. Oops! I was reaching for that carrot! I accidently grabbed the nachos! Who spilled queso on the front of my shirt? I love pizza! I used to be a regular customer of the local pizza delivery. They would call me if I hadn't called in an order lately! I hate the fat and calories pizza has! But I am not good at the "only have 1 piece and a big salad! You'll be so satisfied!" approach. Pizza has a tractor beam and it's set on me. If there is a pizza in the house, the women and children need to take cover. I sadly had to give it up. Or so I thought. how about serving this for the "big game"? Spinach, Pineapple and Canadian Bacon Pizza, The Diva Weigh 9 slices cooked Canadian style bacon, quartered 1 cup spinach, washed, stems removed and chopped 1 cup mushrooms, sliced 1 cup pineapple tidbits in pineapple juice 1 cup pizza sauce 1/2 pound part-skim mozarella cheese, sliced thin 1 Pillsbury Pizza Crust Prepare pizza crust as per package instructions. Place sliced mozarella on crust then layer on Canadian bacon, spinach, mushrooms and pineapple. Drizzle pizza sauce over top. Bake at 400 degrees for 10 minutes. Cut into 16 peices and serve. (1 piece is 3 WW points) You can add any other veggies you like to this pizza. You can cut the pizza into even smaller pieces, kinda like pizza bites. yum-O! the pieces are big! of course I have to have green chile on everything! And please, walk away from the chips! Don't make me come over there!
