Pizza, Mommy please!
"Pizza, Mommy please, pretty please! I'll do the dishes, promise!" Wow, I was quite shocked with my children's explosive answers. Did I imagine it, or was there a just-give-us-junk-food-for-a-change hidden in there somewhere? I am grateful that my children are not picky eaters at all and they will eat whatever I place in front of them(well, almost), but maybe because they never complain, I have forgotten what children really like to eat. I can just imagine the conversations at school. ... "what did you eat last night?
" Oh, we ordered pizza!" says little Johnie. "We had green bean stew with cucumber raita, says the little Timm children. " Oh my word, my poor children..... I love making pizza, so it is not like my children have never had homemade pizza, but yesterday I was just flat, I could not lift my arms. I was running a temperature and really just wanted my bed. I know, I know I could have just ordered take-aways and be like all other normal mothers, but heck no, normal I am not when it comes to cooking! The whole process of making my own dough could have been avoided if I was willing to to buy ready dough from our local baker, but the thought of getting into my car and drive somewhere was inconceivable. I had to make another plan........ I spotted the wholewheat wraps on about my third trip through the deep freeze to try and get some inspiration. Problem solved! It was a matter of throwing a few ingredients together and voila, easy homemade pizza!! Happy kids? Easy Pizza serves 4 Ingredients 8 wholewheat wraps 1 tin of chopped tomatoes - I used chopped tomatoes with basil, garlic and oregano 500 gr mozzarella cheese grated 12 cocktail tomatoes- halved fresh wild rocket 12-16 shavings of prosciutto 1 red onions - sliced thinly. Method Preheat oven to 200C. You need two wraps per person. Place 4 warps on pizza plates and scatter some grated cheese on them. Top with the other 4 wraps. The cheese sandwiches the two wraps together and cause for more yumminess and a steadier base. Spread some of the chopped tomatoes on the 4 sandwiched bases, top with cheese, a few halved tomatoes and fresh herbs(I used some thyme) and bake in a hot oven for about 8-10 minutes. When the pizzas come out the oven, top with fresh rocket, slices of onion and prosciutto and serve immediately! Don't forget, tonight I will be cooking up a storm on Pasella with my two very talented friends, Ally from Simply Delicious fame and Marisa from The Creative Pot.
