Polenta Bread Recipe
Polenta Bread This is the basic and quick version of polenta bread. The recipe can be varied to suit your taste such as replacing water with milk or yogurt, adding aromatics (garlic, herbs etc), using other kinds of flours, adding cheese, vegetables and so on. The range of possibilities is only limited by your imagination. The texture of the bread is quite different from regular bread. The polenta bread is more dense, bit drier and has a cake like consistency. The crust is really crunchy. Overall a very delicious bread. The bread is not as high as it may seem in the picture (the bread is about an inch thick). Since there is no yeast/proofing involved it is best to make a flat bread. The recipe below is for a quick and easy method. I am testing another version that involves soaking the polenta first. It gives a slightly different texture and takes longer to prepare. I will post the recipe soon. Ingredients ½ cup flour ½ cup fine polenta 2 teaspoons baking powder Water Salt to taste Instructions 1. Preheat oven to 200 degrees 2. Sieve all the dry ingredients 3.
