Portuguese Black Eyed Bean Tuna salad
Found some lovely black eyed beans today which took me straight into Portuguese Childhood flavour mode. Portuguese people love their legumes. This salad works well with chickpeas too. I used: 1 pound of black eyed beans 1 can of tuna 2 hard boiled eggs handful of parsley 1/2 onion some lettuce-of your choice small plum tomatoes-of your choice extra extra virgin olive oil white wine vinegar or lemon Mixed dried herbs salt and pepper to taste I did: -boil the beans for two hours with no seasoning drained and cooled them well -add the raw onion, parsley, tuna, lettuce, tomatoes, dried herbs and boiled eggs -season with salt and pepper -drizzle with olive oil and white wine vinegar -coat it all well and sprinkle with some chopped parsley -sit down and thoroughly enjoy the flavours!
