Pretty cool weather

By Blog of Shannon (Visit website)

FINALLY!  Fall like temperatures have found their way to Florida!  Wooohooo!  Granted, weather.com is telling me that it's 88°F, but I'll take it!  The humidity is apparently only 46% instead of 43572935791%.  When I woke up this morning for my run, I went to let the dogs out and instantly felt the cool morning weather greet me.  It geared me up for my run.  Most mornings it's been hard to breathe from the humidity, but not this morning.  I ran 3.3 miles in 34 minutes.  Since the cooler weather made it's premiere, what else could I have for breakfast other than pumpkin oats?

I know what you're thinking.  That doesn't look like pumpkin oats.  That's cause it's chocolate pumpkin oats!  I was inspired by the piece of chocolate pumpkin bread Brittany made the other night.  The mix in my oats:
1/3 cup oats 1/3 cup almond milk1/3 cup waterDash of salt 1 tbsp flax
1/2 cup pumpkin (what was left of my pumpkin supply)Splash of vanilla1 heaping tsp cocoa powderBack to Nature Sunflower & Pumpkin Seed granolaCranberries'Twas a great start to my day and week.  Work was work.  Lunch was well, delish.  Say what you want to about an overly processed frozen textured vegetable protein patty, these are good...

I actually have several recipes for homemade black bean burgers that I plan to make some day, but until that day comes (or until I run out of these MorningStar burgers), I'm enjoying these.  Especially when shoved into a pita!

Whole wheat pitaOrganic spring mix (shoved down in there, I promise)JalapenosBanana peppersAforementioned veggie burgerKetchup & MustardGrilled okra (on the Foreman for about 5 minutes again) + ketchup Since it was practically freezing outside compared to the weather we've been having, I ate outside.  And still ended up sweating in my work clothes.  Speaking of my work clothes, two of the doctors and one of the nurses at my clinic commented on how nice my dress was today.  It's from 9th grade, age 14 (from Girlfriends, L.A. for those of you who might have gotten that catalog).  Now that I'm 23, that makes said dress 9 years old.  HA!  Such a fashionista.

ALERT:  Tim Deegan (the weather man on the local news) is telling me the high for Wednesday is 80°F!  I need to break out my parka!

And one more picture before I go cook dinner...

My afternoon snack of an apple and one tablespoon of almond butter (yes I measured, if I don't I'd scoop about half the jar out and claim it was just a little more than a tablespoon....).  The apple looks huge.  It was just a little gala, thinly sliced.

Catch ya later!
