Pub Grub

As of lately I've been working on my "Pub Grub" not necessarily the pub suppers but more accurately the junky appetizers and fork free foods. We've recently fitted our home pub with new bar stools, the last thing on our to do list is for my  husband to finish fabricating the counter top for the bar itself. Its really become Stephens pride and joy, its something that he literally built from the ground up. (the room was originally an empty room packed to the ceiling with wood pellets for our heat stove) 


Although somewhat un-conventional it really has become somewhat of a family hangout. Its a small cozy environment thats perfect for watching cartoons and eating chicken nuggets and ice cream on a stressful Wednesday evening, not to mention its a small room and its very efficient to keep cool with a small air conditioner. Although the room is far from completion, in the mean time there's been no shortage of flowing beer, snacks and ice cream. It is summer time after all and I've been making sundaes and ice cream sandwiches galore!

For this particular evening I pulled out what I'd consider the classics. I made a simple nacho dish with tostadas, bacon, onion, olive and cheese, with home pickled jalapeno'. A long side I served a chipotle agave sour cream sauce. Although the tostadas were fairly broken the ones that remained in tact offered up the perfect nacho since its a big round. I prefer this to single little chips because instead of struggling to find the holy grail in the middle that has the absolute most cheese you can layer the chips a bit better and evenly. The second dish I made was cheese filled smoked sausages in a mustard rum sauce. I made the sauce with dark rum, mustard, white balsamic vinegar, ketchup onions and sugar. Although they were quite rich I was happy with the depth of flavors. The only complaint was my method of serving, I served them pricked with toothpicks although I was shooting for hand foods next time I may just opt to go with forks. Regardless of the junk foods the best part is having Friday nights to really get together with family and friends and let go of the stresses of Monday through Friday. It really is becoming the homestead sanctuary.
