Pumpkin Pie Granola Bars (12 bars)

The other day, I had a friend who was venting about her diet.  She's been experimenting with her meals to see if it will improve her asthma.  Although she is doing a great job, she has been faced with a problem... processed foods.  What blows my mind is these companies take advantage of our lack of knowledge for food.  I even find it strange that "Biggest Loser" endorses certain products as well.  We think that we're being health conscious when we buy yogurt, granola bars, cereal, canned fruit, etc.  They're all seem healthy right?  Wrong!  Have you ever looked at the ingredients of these items?  If you can't pronounce the ingredients, put it down and walk far, far away.  Before you go in your cupboard to find your peanut butter, think for yourself... what ingredients should be used to make it? Peanuts.  Now go look at that jar.  Pretty appalling!  





The best advice I can give when picking out your groceries, is stick to the most natural ingredients possible.  One problem I have is finding snack foods that fit this description.  Even granola bars have added sugars in them.  So, I was determined to find a granola bar recipe.  I saw this on another blog called Spoonful of Sugar-free.  What I absolutely loved about this recipe, is that it calls for a veggie.  Anytime I can add a fruit or veggie to a recipe, I'm on it!





Ingredients:

1 c. pumpkin puree

1/2 c. almond butter 

2 eggs

2 c. oats

1 c. raisins

1 c. pumpkin seeds

1/8 tsp. pure stevia extract

1 Tbsp. cinnamon

1 tsp. nutmeg

1 tsp. allspice

1/2 tsp. ground ginger





Method:  

Preheat oven to 375.  Mix all the ingredients together and spread onto a baking sheet.  Bake for 15 minutes or until the bars are golden and firm.  Let cool for 5 minutes and then cut into bars.
