Purple Cabbage

While out on my little grocery shopping extravaganza yesterday I passed the produce section and spotted the most beautiful purple cabbage. Although I have had purple cabbage several times in coleslaw I had never tried this vegetable alone. I had this idea in my head of what raw purple cabbage might taste like, but was dying to find out for myself. After doing a little research on this veggie last night I also discovered that cabbage boasts a variety of health benefits. Raw cabbage is an excellent colon cleanser as well as good for digestion. It helps to flush toxins out of the liver and is also high in calcium, potassium, and magnesium! Finally cabbage is high in antioxidants, great for the skin as well as for the immune system. If all of these fantastic health benefits have not convinced you to try out purple cabbage hopefully this dish will.  source


 



Quinoa Cabbage Salad


Quick and easy this dish can be thrown together in under 30 minutes. It has so many delicious textures and flavors you can’t go wrong. This meal is also great served hot, cold, or room temperature!

Ingredients:


2 cups cooked quinoa (3/4 cup quinoa and 1 1/2 cups water)

1 small onion

3/4 cup red cabbage, shredded

1/2 c fresh parsley, chopped

1 large handful sprouts

1 T olive oil

sea salt and pepper to taste


Dressing:


3 Tbs balsamic vinegar


1/3 cup olive oil


juice of 1 small lemon


2 Tbs honey


3 tsp soy sauce


1/4 tsp salt


Directions: Rinse quinoa and add to a pot of boiling water, reduce to a simmer and let sit 15 minutes or until water is absorbed. In the meantime sauté onion in olive oil in a large skillet  until translucent add salt and pepper. Remove from heat and set aside. Make the dressing in a small bowl whisking together. Combine the cabbage, sprouts, parsley, onion, and quinoa. Toss with dressing, garnish with parsley and serve.


Line up ingredients


in a large bowl combine sprouts, cabbage, parsley, and onions.


To prepare the dressing whisk together all ingredients. Fold cooked quinoa in with the vegetables and toss with dressing! Serve.


This salad is best served room temperature, but can be eaten warm or cold! I loved the crunchy texture of the raw cabbage with the quinoa it was so delicious and full of exciting flavors! After preparing this dish I am officially a fan of purple cabbage and plan to use it much more frequently in my cooking.


Ok I gotta run, I have to get an assignment done before my night class tonight booo. Its cold here again too so my motivation is fading fast. This weather is making me crazy why can’t it just stay warm :( thank goodness spring is right around the corner.
