Quick Crustless Quiche
A delicious quiche without the hassle of making pastry. This is versatile as you can add whatever combination of vegetables you like. You could even add meat, although I haven't tried this myself. You can make it as bland or as fancy as you like depending on the occasion. I cook it in a glass pie dish and it is easily cut into wedges. I have regularly cooked it in a muffin tray which is great for finger food, however, to be honest they are time consuming to remove from the tray. As in the photo, I have tried them in cupcake papers. The kids loved this idea but the quiche did not lift easily from the paper. I think I will stick to the pie dish as it was easy to serve hot or cut a cold wedge for the school lunchbox. Ingredients: 1 cup pastry mix (some people know it as Robor pastry. Next to the flour and bread mix in the supermarket) 2 cups milk 4 eggs 1 small chopped onion Chopped vegetables and herbs to your liking (I used zucchini, capsicum. mushroom and semi dried tomatoes) 1 1/4 cup grated cheese Method: Preheat fan forced oven to 170Soften veggies a little in the microwaveMix pastry, milk and eggs together with a wooden spoon. Mixture will be runny and a bit lumpy.Mix in veggiesPour into greased pie dish or muffin trayCook for 35 minutesServe hot or coldI was recently introduced to a new website in which you can review and store recipes you are interested in.
