Quick Weekend Recap

I've been really busy this weekend, so I haven't had much time for blogging! I'm just going to do a quick "list" recap for you all. I'll get back to my normal blogging schedule tonight.

Friday

Breakfast:
"Topical Oats"- oatmeal sweetened with maple syrup, topped with vanilla yogurt, kiwi, pinapple, coconut and almond slices. YUM.




Lunch:
Lettuce wraps and fruit salad- big romaine lettuce leaves filled with chickpeas, alfalfa sprouts, tomatoes, onions, feta cheese and hummus. The fruit salad with a mixture of pineapple, black and red grapes.




Dinner: (No pic)
Stacia came down and we ordered pizza from Dominoes and played the Who Wants to Be a Millionaire boardgame. I had one slice of pepperoni and one slice of mushroom & green pepper.


Saturday
Breakfast:
An "on-the-go" breakfast of leftover mushroom and green pepper pizza. I also had some grapes (not pictured).

Lunch: (No pic)
My mom, my brother's girlfriend and I had gone wedding dress shopping and stopped at Ruby Tuesday's afterward. I had my usual lunch special- Turkey Minis with fries and the salad bar. MMM, MMM GOOD.

Dinner:
Since lunch was big, I wasn't real hungry for dinner. I ended up just making a bagel, topped with hummus, tomato slices and cheese, which I broiled in the toaster oven. Perfect light dinner.

Sunday

Breakfast:
Egg white omelet with imitation crab meat, artichoke hearts and asiago cheese.


Lunch:
I was pretty lazy yesterday, so I decided for lunch I would make a Lean Cuisine Panini that I'd bought the other day. I had the chicken, mushroom and spinach one. My review: very good! It truly is amazing how crispy the bread gets just from cooking it in the microwave. This is a good meal for busy days.



On the side I had a small ceasar salad made with some low-calorie ceasar dressing I'd picked up after church in the dollar section of our grocery store. Very yummy! I love ceasar salads.


Dinner:
After church I had put a whole bone-in chicken in the crockpot. The chicken was one of my parents' (they used to raise a few as a hobby). I just added garlic sea salt and black pepper, and turned the crock pot on low, and cooked for 7 hours. Perfect, fall-off-the-bone chicken.

I had a leg (I love dark meat, I can't help it) and some steamed asparagus, while reading a bridal magazine.
