Quinoa Salad Bento Box

It seems like I’ve been dragging my feet to uphold my end of the bargain and recreate the winning recipe from our recent “M4SB Giveaway” winner Lauren (Lumi)!    But I promise it was just me being a “space-cadet”… do people still use that “term of endearment”? :)



Anyhow I looked forward to this bento because it’s vegetarian and  gosh darn it… why does Saba Man always get to eat all the cool stuff?  This one is MINE!  


Here’s Lauren’s winning submission!


purple: Quinoa salad with parsley

red: Mini omelettes with diced tomato

green: Daikon radish and carrot

yellow: Lightly salted edamame


I interpreted the quinoa salad to contain olive oil, garlic, pepper, and parsley.  Very tasty!   I added a slice of watermelon radish to add a just a bit of color (hope you don’t mind Lauren)   The omelette is layered between chopped tomatoes and seasoned simply with a light splash of shoyu.  And last but not least steamed and shelled edamame with toasted sesame seeds and salt.


I look forward to my lunch tomorrow!  


You know, besides having the chance to give away a very cool bento box, I enjoy recreating the recipes… so much fun to try things that I would never of thought to pack!  So thank you everyone for participating.
