Radicchio pizza with truffle oil, my new favorite vegan recipe

I have been looking for vegetarian or vegan recipes that are delicious and not too radical for me because let's face it: I am a meat eater.  But once in a while my body just asks me for veggies...not meat (the horror!!!).  Well, one of my friends told me about Alicia Silverstone new cookbook titled The Kind Life, and she mentioned this pizza recipe.  Honestly, I was so curious about a pizza with just a veggie and some oil (another horror!!! LOL, Ok I'm kidding.  But seriously, what is a pizza without sauce, cheese and pepperoni?!).  But she told me that I had to try it because it is delicious.  I am game for trying things at least one, so I made this.  Here is the easy recipe:

Ingredients:
1 Large head radicchio
Olive oil
Fine sea salt and freshly ground black pepper, to taste
White truffle oil, to taste
1 fresh pizza crust (preferably a healthy, whole grain one)

Directions:
1. Cut the radicchio in half, then slice each half crosswise into thin ribbons (as thin as possible).
2. Dress with olive oil, salt, pepper, and a few dashes of white truffle oil to taste.
3. Preheat the oven to 415 degrees Farenheight.
4. Toast the pizza crust in the oven for 7 minutes, or until it is heated through and slightly golden, but not crunchy.
5. Scatter the dressed radicchio over the pizza crust and return to the oven for another 3-5 minutes, until the radicchio is warm and just starting to wilt.  Serve immediately.


The verdict?  OMG, this was so surprisingly delicious!  The slight bitterness (not in a bad way) in combination with the truffle oil is a killer combination.  I think what really helps this pizza is the crust because I do think that if you use a normal flour pizza dough, instead of a whole grain, the taste would be different.  But how do I know this is REALLY good?  My dad.  He is the ultimate "meat eater, don't give me that vegetarian mumbo jumbo" kind of guy and he loved it.  He couldn't stop eating.  He liked it so much that I had ingredients left and he asked me to make him one to go, and because I love my dad...I did.  so, give this easy recipe a try.  It is healthy and fast to make.  and a welcome change anytime of the year.  Buen apetito!
