Rat, Hal, Tom,Moz and Bas….!

Tonight I dined with my godson Daniel…when he was born I thought he looked like a rat…..most newborn babies do, other than to their parents.

Tonight 10 weeks later, I thought he looked like every star that shines in the firmament. He’s a right little flirt too and I couldn’t take my eyes off him!

So, he invited me to stay for dinner! He was too busy billing and cooing to actually do the cooking, so mum did it and she’s a pretty nifty cook.

My contribution to the evening was a baby tomato, mazarella and basil salad. Vast amounts of pungent basil and a good olive oil made it a wonder to not only eat but to smell as well.

Katherine made a really good ratatouille using as a base a can of tomato pasta sauce which gave it alot of taste that might otherwise have taken a couple of days to develop.

Oh, I also nabbed a nice piece of Halibut reduced at Waitrose. Wonderful, meaty fish with huge bones which we just grilled and served with a piece of lemon.

I am appalled how much weight I have regained since my ‘debacle’ of only 6 weeks ago….I must try and lose some of it again as soon as possible…. so stand by for some healthy recipes….and yes, I am aware of the irony of the Georgia post in saying that !!
