Rawa Laddu , Suvarna Laddu & Rawa Coconut Burfi
Rawa Laddu Makes : 30 laddus Time required : One hour Ingredients 250 g rawa 250 g flour 1 cup ( 80 g ) freshly ground coconut 1 cup ( 200 g ) sugar , powdered 3 teaspoon ( 15 g ) ghee 1 cup ( 240 ml ) milk 1 tablespoon ( 15 g ) cashew nuts , chopped 1/2 teaspoon ( 2 g ) cardamom powder Method Roast the rawa along with flour in a saucepan on a low heat till it turns slightly brown in color. Then add grated coconut, sugar , ghee and milk and saute till the mixture leaves sides of the pan. Add chopped cashew nuts and cardamom powder to the mixture and stir well. Remove the pan from heat and when slightly cool , take a small portion of the dough and roll into small laddus. Suvarna Laddu Makes : 25 laddus Time required : 50 minutes Ingredients 1/4 cup ( 50 g ) ghee 1 cup ( 200 g) rawa 1/2 cup ( 100 g ) besan ( gram flour ) 1/2 cup ( 40 g ) grated coconut 10 cashew nuts , chopped 2 cups ( 400 g ) sugar 8 cardamom , powdered 1/2 teaspoon( 2 g) nutmeg powder Method Heat a littel ghee in a heavy bottomed pan and roast the rawa till a fine aroma emanates . Remove from the pan from the heat and keep aside. Add a little ghee , add gram flour and roast till brown. Remove and keep aside. Finally add more ghee and fry the grated coconut and finely chopped cashew nuts. Saute for five minutes . Mix all the fried ingredients. Put half cup of water and two cups sugar in another heavy bottomed pan and bring to a boil to obtain sugar syrup of one string consistency. Add the roasted rawa , gram flour and coconut to the sugar syrup. Also add cardamom powder and nutmeg powder. Stir well and keep aside to cool. Take handful of the mixture and roll into laddus. Rawa Coconut Burfi Makes : 40 pieces Time required : 40 minutes Ingredients 1/2 cup ( 100 g ) ghee 1 cup ( 200 g ) rawa 1/2 cup ( 65 g ) flour 1 cup ( 80 g ) grated coconut 1/2 cup ( 80 g ) cashew nuts, chopped 1 cup ( 200 g ) sugar 6 cardamoms , powdered 1/2 cup ( 120 ml ) milk , with cream A few strands of saffron ( soaked in a little warm milk ) 1/4 cup ( 40 g ) raisins 1/4 cup ( 40 g ) pistachios Method Heat ghee in a pan . Add rawa , flour and grated coconut and fry for a few minutes. Add chopped cashew nuts. Stir well. Remove from the heat. When cool add sugar , cardamom powder and grind mixture for a minute , so that all the ingredients get mixed well. Reheat the mixture in a pan and gradually add milk along with cream. Stir well. Keep stirring till the mixture begins to leaves the sides of the pan. Add saffron milk, raisins and pistachios. Spread the mixture on a greased plate.
