Huevos a la Mexicana – A Great Breakfast
Huevos a la Mexicana – scrambled eggs with tomato, onion, and serrano chile – is served in homes and restaurants throughout Mexico. It is classic Mexican comfort food. It tastes good and it’s good for you. We make it at home regularly and when we go out for breakfast it is the dish that I invariably order. I think you will find it to be a big hit at your house. Ingredients 2 eggs 1 small roma tomato 1 small serrano chile 1/4 small onion 1 tablespoon olive oil Pinch of salt The serrano chile adds a fair amount of heat to the dish. If you don’t like your food too spicy just add 1/2 of the serrano chile that the recipe calls for. Preparation 2. While the vegetables are being sauteed beat the two eggs with a pinch of salt. 3. Add the beaten eggs to the pan with the vegetables. When the eggs begin to set gently break them up with a spatula. Keep breaking the eggs up until they are fully cooked and fluffy. 4.
