RECIPE: TSUNAMI CHICKEN WITH RED BEANS & RICE
![]() First let me say that my thoughts & prayers go out to the Tsunami Victims in Japan. Hang in there! Yesterday I put together this meal & today I will name it Tsunami Chicken with red beans & rice. So yesterday, As I looked into my freezer I discovered a bag of "Fast & Fixin" Chicken breast strips. Nothing like "fresh from the freezer" food! Putting the chicken breast strips into a pan, I drenched them with a tidal wave of olive oil & covered them with garlic salt. The cooking time was 15 minutes at 400 degrees. I got my rice cooker going with 1 1/2 cups of white rice, some margarine & a can of chicken broth. I opened a can of red beans & put them in a microwaveable container. As my chicken strips were baking in the oven I prepared a simple salad with Iceburg lettuce, tomatoes & green pepper. As the rice was finishing I Nuked the Red Beans. After 15 minutes, I pulled the chicken tenders from the 400 degree oven & put together my meal! Ouch, it was hot! There you have it.
