Before I left work this afternoon, I snacked on a banana:


I completed my first project on my own today.  It felt great to finally be done with it.  I have spent the past 2 weeks making this Powerpoint presentation and I've made countless revisions per my boss.  At 5:02pm today I added the last bit of information and turned it in.  It felt good.

I've made quite a few magazine recipes this week: pasta (January's Everyday Food), broccoli beef stir fry (Jan/Feb Cooking Light) and tonight's dinner which was yogurt marinated chicken.  Tonight's chicken was good...like really good.  Thad agreed.  This dish was featured in Cooking Light's travel section on Vancouver.  It reminded me of chicken I would order at a restaurant.  The recipe isn't online yet since it's in this month's magazine, but I made enough changes to it to be able to post my own version.  



I made the marinade for the chicken before I left for work this morning.  I made enough for two chicken breasts, and let it marinate all day.  It consisted of:
1/4 cup plain greek yogurt1.5 Tbsp garam masala1.5 Tbsp chopped garlic1 tsp EVOO1/2 Tbsp lemon juice1/2 tsp cayenne pepper1/2 tsp cumin1 tsp minced fresh ginger
After I got home (and finished that dang Jillian workout), I cooked the chicken in the oven at 375 for 35 minutes.  Thad wasn't too sure about the chicken when it came out of the oven.  When I told him that it had yogurt on it, he said that he didn't want to eat yogurt because it would 'make him grow boobs.'  I have absolutely no clue where he gets the things he says!  Needless to say, he really liked it. :)  He made a chicken sandwich while I made a beet salad with feta cheese, radish and red onion--it was featured with the chicken in Cooking Light.

About 3/4 of way through eating the aforementioned meal, I somehow managed to bump my plate and it all fell into my lap. #fail  I decided that warranted dessert.


A chocolate VitaTop with pumpkin & pumpkin pie spice spread on top.

My muscles are already sore from this morning's workout.  That means I'm going to be doubly sore in the morning!
