Red & White Cauliflower Bake-from Vegan Yum Yum Cookbook

I mentioned earlier that dinner would be fabulous...well it was, just sayin'! My gf got me the Vegan Yum Yum cookbook by Lauren Ulm for Christmas, if you haven't checked out the blog it's based off of, you absolutely must! You can find the link on the left.

Anyway, tonight we tried the Red & White Cauliflower Bake. It's a simple yet decadent casserole with an herbed tofu ricotta layer, a cheezy cauliflower layer, and then it's topped with marinara and breadcrumbs. It didn't plate as well as I'd hoped, but Lauren mentions it sets better the next day. Either way, we all had seconds! Delish!! For sides we had sautéed garlic asparagus and roasted baby rainbow potatoes (I've never had a purple potato before!). I love weekends! I hope people are enjoying this blog.
