Have you thanked a soldier today?? Not having internet at the new condo yet is KILLING me! Thank goodness the parents live close by, not to mention we are just finishing up a Memorial Day cookout at my parents house. The animals enjoyed their Memorial Day too: Boone boy and fatso Onyx Our cookout included lots of delicious food: Notice the solo veggie burger for me being cooked on the top rack of the grill. We had quite the spread My plate included my veggie burger on a whole wheat thin and a little spoonful of pretty much everything. And dessert: A redneck s’more…..that would be a s’more made on the grill and not over a campfire. Afternoon snack today was a mini lara bar. Lunch today was Which Wich. I went with a new combo today: whole wheat bread hummus avocado pesto bell peppers red onions mushrooms black olives parmesan cheese Prior to our trip to Which Wich, Russell and I went to the gym. Even though we’ve worked our butts of the last few days packing boxes, moving them, unpacking them, and running around like a bunch of crazy people we needed a good workout at the gym. Russell enjoyed himself some basketball and a weights session while Kim and I did the Insanity Fit test and rode the spin bikes for 30-45 minutes. The Fit Test is ridiculously hard, but Kim and I both have improved from our Pre-fit test….YAY!!!!!!!! Late-breakfast was oats. I woke up craving oats this morning!!! 3/4 cup oats 1 1/4 water 1 banana spoonful Naturally More PB raisins Also french press coffee with frothed skim milk and truvia. I had new coffee beans this morning when made for a delicious cup of coffee! Did you know when you buy a bag of Starbucks coffee at Wal-Mart the bag has a coupon on it for a free cup of coffee…score! These beans smelled delicious! Mmmmm. Yesterday, included buying mini blinds, trying to unpack more boxes, and decorating. My camera got lost in the shuffle for a bit yesterday, so there are limited pics. Breakfast: This was a totally delicious combo! A chocolate brownie Gnu Foods bar topped with PB….yum, yum, yum, yum, and yum!!! And a glass of skim milk. Lunch was Panera. I was thrilled when I saw this sign: I discovered this salad at Panera looooong before I discovered my Fuji Apple Chicken salad, unfortunately this salad is seasonal. Dressing on the side, whole grain baguette, and coffee with truvia and skim milk. Doesn’t this salad just make you happy? It does me! Russell and I had lots of visitors yesterday to our new home, including Kim. She showed up with veggie burgers that her and Tyler had made from scratch!! And since it was time for me to eat again, I was thrilled to give this burger a try. Whole wheat hot dog bun with my veggie burger and a laughing cow cheese. Fresh strawberries, pita chips and Jen’s salsa. Delicious! Thanks Kim and Tyler for sharing your veggie burgers with me! Other foods that were enjoyed yesterday while the camera was lost included: mini lara bar apple nut clusters Is my 4 day weekend really over?!?! How did it go by so fast? I can’t believe I have to go back to work to work tomorrow already! How was your weekend?? How did you enjoy your Memorial Day holiday??
