Last Thursday, I said that I was applying to an MBA program.  This Thursday, I found out I was accepted!  I applied to UNF, and figured I would get accepted to the program, but actually reading "Congratulations and welcome to our MBA program!" was pretty surreal.  It's still a decision that I'm praying and thinking about, as well as talking it over with Thad.  It's an exciting prospect, that's for sure!  We shall see what will happen.  I'll keep you updated ;).

I also received coffee in the mail.  And not just any coffee, but POMx Iced Coffee.  The nice guys over at POM sent me 4 bottles to sample (thanks, Blue!).  It included 2 vanilla, chocolate and cafe au lait flavors.





If you know me, you know I'm slightly addicted to coffee (understatement).  I prefer my coffee piping hot so I rarely--if ever--buy iced coffee, so this was the perfect opportunity to try something I probably wouldn't buy otherwise.  POMx Iced Coffee is "made with premium, all natural-ingredients, POMx Iced Coffee is a delicious blend of antioxidants, caffeine and rich coffee."  Sounds right up my alley!  It also contains POMx--a potent antioxidant rich extract from POM Wonderful pomegranates and contains a daily doses of polyphenol antioxidants from pomegranates.  Caffeine? Check.  Healthy?  Check.  But how did it taste...



I had placed the bottles in the fridge during my lunch break, so they were nice and cold whenever I decided to try them.  I sampled all three flavors and truthfully liked them all.  The vanilla was the sweetest, followed by the chocolate, then the cafe au lait.  The cafe au lait was my favorite since it tasted the most like coffee.  I ended up drinking half of one of the vanilla bottles.  As I was trying to decide on something else to snack on, I knew I should get some calcium in.  I was surprised whenever I looked down at the bottle and saw that 1 bottle of the vanilla POMx Iced Coffee provides 35% of the daily recommended value of calcium.  Pretty neat.  The cons of the coffees?  They do have around 170-190 calories for on 10.5 oz bottle, and around 20-30 grams of sugar.  I normally don't prefer to drink my calories, but if I'm going to, a coffee flavored drink is what I'll splurge on.  Also, the calorie content in one of these is the same amount as a grande latte from Starbucks.  I treat myself to a latte every once and awhile, so these coffees would be a perfect substitute as a treat (or very much needed caffeine boost before four hour management meetings).  And about the sugar, the good thing is, it's organic cane sugar.




I like the protein content, too.  Protein keeps you feeling full.  Anyway, I can definitely see myself buying one of these gems on a hot day when I need a caffeine boost.  I guess I do like iced coffee after all!

After my sampling and chugging sipping of the vanilla flavor, I had half an orange:





I don't know that much about oranges.  Thad said I need to wait for Chinese Honeys.  I didn't decide I liked oranges until about a year ago whenever he let me try the sweetest orange I'd ever tasted.  I don't know what kind it was.  I assume a Chinese Honey.  Again, I don't know anything about oranges.  This tasted....like an orange?  It was juicy, but not that sweet.

For dinner I used ground turkey to make turkey and wild rice casserole.  I halved a recipe and needed a smaller casserole dish.  I didn't have one small enough for the amount of food I made, so I used two petite dutch ovens Becky gave me well over a year ago:



They look large, but I can assure you they are not.  They were the perfect size for the amount I made.  Thad and I split one and saved the other for left overs.  To be quite honest, this didn't have much flavor.  The recipe called to use carrots, celery, sage, paprika and S&P, but it just wasn't enough so it was pretty bland.  The wild rice was good though.  I also steamed cauliflower (liked it!) and had an arugula salad with it:




That's paprika on the cauliflower.  I had a few apricots and dates for dessert.

The caffeine from the POM coffee has worn off (175mg per bottle), goodnight!
