Roast Chicken
Usually, my spouse gives me carte blanche to choose the meals we will be eating. However, last week, he badly wanted to eat a roast chicken. So, the deal was concluded: we will be having a roast chicken for dinner over the weekend. One of the advantages to cook with chicken is that it goes so well with many ingredients! So, while I was preparing the chicken , I thought it would be great idea to make a mixture of fresh lemon juice, dried thyme and butter to add more flavors to my chicken. I also added a few garlic gloves under its skin to add a delicate garlic garlic flavor to the meat. While the chicken was roasting in the oven, my apartment was filled with a wonderful buttery-lemon-thyme smell! I could wait to taste it. And when I did, I was not disappointed. The meat of my chicken was moist, juicy with a buttery, lemon and garlic flavor. The skin was crisp with a nice hint of butter and thyme... My roast chicken was simply delicious. Ingredients 1 whole chicken of about 1 to 2 kg 100 mL clarified butter* 20 mL dried thyme 6 garlic gloves 15 mL fresh lemon juice pepper to taste salt to taste Instructions 1. Preheat the oven at 400 F degrees. 2. Mix the clarified butter, half of the dried thyme and the lemon juice in a medium bowl. 3. Put the garlic gloves under the skin of the chicken. 4. Brush the skin of the chicken with 3/4 of the butter mixture. 5. Put the remaining butter mixture under the skin of the chicken. 6. Put the chicken in a greased roasting pan. 7. Add the remaining dried thyme over the chicken. 8. Roast for about 30-40 minutes in the oven. 9. Decrease the heat of the oven to 350 F degrees and roast the chicken until it is cooked. 10. Let cool for 10 minutes. Makes 4 to 6 portions. *To clarify the butter, put the butter in a saucepan over low heat, melt it, remove from heat and skim off the foam. Note: I had a few problems with my settings while I was taking the pictures of the roast chicken. The sharpness of the picture at the top of my post is not so good.
