Roasted Peanuts with French Beans
![]() French bean (British) or Green bean (American) is my favourite bean vegetable, especially when cooked with fried rice. When I was at my teens, my mum used to cook this french beans in variety of recipes and my favourite were diced french beans in fried rice, in omelette and 'Lup Lup Mixed'. Lup Lup, pronouced in Cantonese Chinese, means diced pieces of french beans, roasted peanuts, choy poh (preserved radish) and any vegetables or beans in small pieces mixed together. Some version includes diced dried hard beancurd, the only type of beancurd that I don't like. This dish goes well with plain porridge or rice and easy to prepare. You can replaced the roasted peanuts with any nuts, but this was what my mum had used to cook for us when I was a teenage. I can just eat my rice meal with this one dish alone, and never fed up of it until today. ![]() 1 cup diced French Beans 1 cup roasted peanuts 1/2 cup choy poh (preserved radish) 1 tsp soy sauce 1 tsp sesame oil dash of pepper 2 tsp grapeseed oil Stir fry the choy poh with the grapeseed oil. Add in french beans, pepper, soy sauce and sesame oil. Stir fry until french bean is cooked but not too soft. Turn off heat and mix in the roasted peanuts. Serve. related searches : Roasted
