Are you feeding a small army and you need a side that take little effort but not ho-hum?  This is what you are looking for, it is super easy and super delicious.  If you are a fan of corn you will be a fan of this.  


My second evening back in FL my mother-in-law asked if I could make dinner for everyone because she was going to be at her shop till late.  She is a hair stylist.  I said no problem.  Hubby and I went to the grocery store to pick up a few items and found a great sail on top sirloin.  They were usually over $7 a pound and they were on sale for just over $4.  We grab a few of those puppies and I decided it was meat and potatoes night.  I made my au gratin potatoes and added some bacon to them.  I knew that my mother-in-law always tries to do some sort of a veggie.  That is when we  saw ears of corn for 25. a piece, and that is when I thought of this.


Roasted Red Pepper Corn


8 ears yellow corn

1 stick of butter

1 10 oz jar of roasted red peppers

2 tsp pepper

2 tsp kosher salt

4 cloves garlic, minced


Preheat oven to 350 degrees.


Using the stick of butter, generously rub each ear of corn with butter. Season with 1 tsp of salt and 1 tsp of pepper. Place in deep cooking pan.


Roast in oven till bright yellow, about 15 minutes, turning half way through.


Remove from oven and set aside. Cool until able to handle.


Strip corn from the cob and put back in the roasting pan. Add diced red peppers, garlic, remaining salt and pepper. Toss. Taste and add seasoning if needed. Slice remaining butter into patties and place over the corn.


Return pan to oven for an additional 15 minutes, stirring occasionally.

To facilitate in making this yummy side dish I am giving away a corn stripper.  HA I could make a gutter joke right now but I won’t. :D
