Rocky Road
Look away now if you’re on a diet…this recipe combines my favourite fridge cake recipe with the best of what you can buy in a sweetshop to make the perfect rocky road for eating with a cup of tea in the afternoon. Oh, and it’s also a great no-cook recipe to make with the kids (let them lick the bowl after). Serves 10 750g Dairy Milk or other chocolate 4 Mars bars, roughly chopped 100g Small marshmallows 135g Malteasers 200g Digestives, broken up into chunks 75g Chopped dried apricots 20g Raisins Melt the chocolate over a low heat in a large saucepan. You can use a bain marie but it’s easier this way – just don’t let the chocolate burn. Add all the other ingredients and combine with a wooden spoon. Pour the chocolatey mush into a tin (I like to line one with cling film so it’s easy to get it out) and chill in the fridge for at least two hours, preferably overnight. When the chocolate is set, tip out of the tin and score into lines and cut up into bitesize pieces. It’s very rich and you won’t want a lot in one go! related searches : Rocky Road
