Russian Salad (Olivier Salad)

Happy Monday everybody and Help! I don't know how is called in English the Russian Salad. That salad invented by a French chef during his stay in Moscow, although some say it's  from Italy, but it seems that the Polish are claiming they are the inventors too...
For now, I'll call it "Russian Salad" like a good student that makes literal translations.Waiting for corrections or denials ... 

Update: Thanks to Carlotta, I've discovered the English name of this salad, which is Olivier Salad. 

Olivier, is the name of "that" french cook we were talking about, who was working in Moscow and invented it! Thanks.





Ingredients for 2 people
1 potato
1 purple potato
1 carrot
1 cup of frozen peas
1 cup of frozen green beans
1 slive of cooked ham
1\2 lemon juice
2 eggs room temperature
salt & pepper
1 cup of olive oil


Boil in salted water the cleaned and cutted  vegetables, until they get tender.




Meanwhile, prepare the mayonnaise:  whisk the eggs with a beater,  in a bowl placed on a pan of boiling water  (do not go above 60 ° otherwise you will get coocked eggs). Continuosly add a thread of olive oil, spray the juice of half a lemon,  and finally sprinkle with salt and pepper. Now taste in case you need to add some seasoning.






When the vegetables are cold put them on a serving dish and stir altogheter with the mayonnaise. Prepare and add some little cooked ham  rolls and garnish with a tomato and some basil leaves.





Insalata russa


Buon Lunedì a tutti e Aiuto!! Ma come si chiama in inglese  l'insalata russa, quella inventata da un cuoco francese durante la sua permanenza a Mosca, anche se alcuni dicono che sia tutta italiana, ma pare che anche i polacchi vogliano la paternità di questo piatto...

Per adesso la chiamerò "Russian Salad" come una brava allieva che fa traduzioni letterali.

In attesa di smentite o rettifiche...

aggiornamento: grazie al suggerimento di Carlotta, ho scoperto che conosciuta come  Olivier Salad, dal nome del cuoco francese di prima, che lavorava a Mosca! Grazie.



Ingredienti per 2 persone



1 patata gialla
1 patata viola
1 carote
1 tazza di pisellini surgelati
1 tazza di fagiolini surgelati
1 fetta di prosciutto cotto
1\2 succo di limone
sale e pepe
1 bicchiere di olio di oliva
2 uova a temperatura ambiente


Metto a bollire in acqua salata le verdure pulite, lavate a tagliate a tocchettini, fino a che non saranno tenere.

Nel frattempo preparo la maionese montando con la frusta le uova in una terrina adagiata dentro una pentola di acqua bollente per pastorizzarle (non andare oltre i 60° altrimenti cuoceranno), aggiungo a filo l'olio di oliva, spruzzo il succo di mezzo limone salo e pepo. Assaggio.

Quando le verdure saranno fredde le metto su un piatto di portata e amalgamo con la maionese, faccio dei rotolini di prosciutto cotto e decoro con un pomodoro.
