Sabudana Vada/Crispy Tapioca Patty/Pearl Sago cutlets
U need- 2 brown potatoes boiled(80%) and grated or (u can even bake potatoes in 350F pre. oven for 45 mins to get rid of moisture) 1 cup sago/sabudana/tapioca washed and soaked (just soak in some splashes of water,til the sago is wet) ¼ cup roasted and coarsely ground peanut powder 3-4 green chilies finely and 1/4 cup cilantro made into coarse paste(i added 2 fresh red chillies for color) 1 tsp lemon juice,1 tsp sugar,1/2 tsp red chilly powder,1 tsp roasted cumin powder,Salt to taste Oil for frying METHOD- Wash sago once-twice ,then add enough water to just cover the sago in the bowl. Cover and leave overnight or 5 hours.Sago will swell and become double in size and wil b soft. Take a bowl and mix all the ingredients together except oil and make into a soft dough as shown in pic. Moist hands and make small medium size balls and flatten slightly to form patties(or Shape into desired shapes-round balls /square or flat rounds like patty as shown in the picture.) Slide the rounds in the heated oil on medium flame. Deep Fry till they are crisp and light brown in color. Drain them well on paper towels. Serve hot with green cilantro chutney,peanut chutney ,coconut chutney ,cucumber raita or just with yoghurt.. (I served it with cucumber raita and fresh cubed watermelons and other fruits)... Note- 1)When u r ready mix in the ingredients.Dont prepare the dough and refrigerate,as it tends to ooze out moisture. 2)The oil shld nt b hot,start with one patty and fry on medium heat. 3)Non Fasting days, u can add peas,onion along with potatoes.
