Oh what a beautiful morning, Oh what a beautiful day! 
I have a wonderful feee-ling, cookies are coming your way! ;)

I made my morning a productive and enjoyable one, spent in the Kitchen, baking my troubles away. 
I set out in the Florida sun, with a noticeable chill in the air, making for quite the enjoyable stroll to the store. I picked up some necessary items as I set out to create a little something near and dear to my heart...and belly! 

So, just what is this elusive gem? The Cowboy Cookie. 
A variable hoarding of the most delicious accompaniments stuffed inside the most impressive of packages. This cookie is not for the faint of heart, I warn. With bits of shaved coconut, heaps of chewy oats and crunchy granola, sweet chunks of chocolate and salty peanuts... A perfect harmonizing of flavors, textures and aromas. Stars will align with such a creation. 

I made mine based on this recipe over at Have Cake, Will Travel. Though touted as a Ranger Cookie, I have always known them as the prior. 
I got crazy and added some Butterscotch Extract into the mix. 
Hohmygawd.

Here's what the non-veg heads at my Dad's office had to say about these: 

"Those cookies were some of the best yet...Damon/aka/Cookie Monster has not responded yet except to say ?it is hard to mess up a cookie? which I totally disagree with...maybe he was thinking of slice and bake or the easy bake oven variety."

"The cookies were (past tense as they are gone) excellent!  I actually liked those soggy chocolate brownies the other day too?. Got any more?"

With everything that is baked, a good portion is sent with my Dad to work. I receive a legitimate rating from the humble crew. Head cookie monster being the above mentioned, Damon. He even gets the runts, i.e: Soggy brownies ;)

By the time lunchtime rolled around I was in the business for something other than cookies.

And by juicy, I mean I had to change shirts. 
My girlfriend is a little under the weather, so she will be receiving a bit of Cowboy love sometime this evening, per request. I aim to please, kids! What better way to chase some syrup than with a Cookie? Maybe this is what Marry Poppins was singing about!
