I’ve recently bought a tortilla/chapatti maker which I have been surprisingly getting a lot of use out of.  I haven’t got around to making chapattis, paratha or tortillas on it but have found other uses for it! It can be used for heating store bought tortillas, for reheating Saudi Mutabbaq (similar to Algerian M’hadjeb but with a flour based dough and eggy or meaty filling) and even for making Saj – a rolled up sandwich typically made with a Middle Eastern break called markouk which is then cooked on a hotplate. Sometimes when we go out and the kids have burgers, I like to have a saj filled with felafel and all the trimmings.


For mine today, I used spare tortillas that were languishing in the fridge begging to be used up, slices of smoked turkey and some Emmental.


A nice quick snack that made a bit of a change from the usual toasted sandwich.
