Salmon and rice noodles fry


From the many salmon dishes that I had posted, it’s obvious that many people like salmon, whether for it’s health benefits or for it’s flavour and delicacy. Salmon is very versatile and can be cooked in many ways. My family loves salmon and I cook it very often. But there are times when I cook too much and there are leftovers. I am not very good in using leftovers and sometimes they just ended up in the bin. This rice noodle fry with leftover salmon actually turned out delicious. I liked it but my husband thinks it would be more delicious with chicken. I think it’s because he has never heard or eaten fried noodles with salmon!


This recipe is very simple and easy. You can use any leftover fish or other meat. There is no fixed ingredients. Use the amount of individual ingredients you want. Put them together and adjust the seasoning according to your taste.


Ingredients

rice noodles (fresh or dry)

cooked salmon (flaked)

green leafy vegetables (washed and cut)

red chilies (chopped)

fried garlic oil

oyster sauce

dark soya sauce

pepper powder

The leftover salmon that I used here was very tasty. It was well seasoned and pan fried and so it’s delicious when fried with the rice noodles. Just break it up in fairly big pieces.

Fresh rice noodles usually come in big chunks. Separate them into individual strands before using. If using the dry type, boil it in water until just to the texture that you like. It will take a few minutes. Do not over boil or the noodles will be too soft when fried. Drain it, add some fried garlic oil so that the strands do not stick together. It is ready for use.


Heat up some fried garlic oil in the frying pan or wok. Do not add too much as there’s already garlic oil added to the rice noodles or you can just fry the noodles without adding more oil. Add some oyster sauce and dark soya sauce and fry until fragrant. Use high heat if possible. Adjust the seasoning according to your taste. Dish it up onto a plate.

Stir fry the vegetables and salmon separately. Add to the fried rice noodles and mix gently so that the salmon pieces are not broken into tiny pieces. Sprinkle some pepper powder if you like. Dish up and serve hot.
