Salsa Chicken
This is a great meal to prepare ahead of time. I usually make at least one extra pan to freeze for later use.
1 lb. boneless, skinless chicken breasts 1 c. salsa 1 T. minced garlic 1/2 can diced tomatoes with green chiles 1/2 can corn, drained 3/4 c. shredded cheese 1/4 c. chopped green onion Place the chicken in a glass 8x8 baking dish lined with foil. Sprinkle chicken with salt and pepper. Add the salsa, garlic, tomatoes and corn, mixing well. Preheat oven to 350. Bake, covered, for 1 hour or until chicken is tender. To freeze: Cool to room temperature. Fold foil over mixture and place in freezer until solid. Remove from pan and label. To cook from frozen. Remove from freezer the night before. Preheat over to 350. Bake, covered, for 30-35 minutes or until well heated. Uncover and sprinkle with cheese and green onions. Bake another 4 minutes or until the cheese is melted.
