Salty/sweet
I've said it before and I'll say it again: I'm a sucker for desserts that pack a simultaneous sweet and salty finish, so long as I can still recognize that what I'm eating is a dessert and not an extension of my savory meal from before. I keep coming back to these fleur de sel caramels because they are at once creamy, chewy, salty, and sweet. It's safe to say that Brian, my mom, and I are completely obsessed with them. My mom, particularly, has admitted to hiding some of these caramels in dark recesses of my house in Los Angeles to prevent others from snatching them. I was on the phone with her last week when she nonchalantly mentioned how she had just unearthed a caramel from somewhere in the house that she'd forgotten about from a few months back. It's safe to say she has since eaten it. The sprinkling of salt on top of each caramel creates a lovely textural contrast and, I think, makes them look more elegant.
