Santa's Diet
Santa is overweight! It's time for some diet.. Let me see what's for him this year.. Though I've got no chimney but I still hope he'll come and drop me some presents like.. a KitchenAid Stand Mixer? I've been a very good girl :)I was inspired by a recipe from SHAPE magazine. They were really low fat brownies. I thought it tasted not bad for low fat version, but mum and god sister prefers the normal full fat ones. Somehow I think it's in their minds. If I didn't tell them it was low fat I'm sure my comments will be slightly different. There wasn't any early bakes for this Christmas and I baked this the very last minute for Christmas Eve, just for Mum. Over here, there's no off days for Eves so Mum came home hungry munching into the brownies before dinner. I couldn't help biting into it as the smell of freshly baked brownies were irresistable!Low-Fat Brownies Recipe (adapted from SHAPE magazine) 3/4 cup (85g) all purpose flour 1/2 cup (60g) unsweetened cocoa 1/4 tsp salt 1/2 tsp baking powder 4 tbsp (55g) unsalted butter 2/3 cup (150g) sugar * 1 large egg 2 egg whites** 1 tsp vanilla extract 2 tbsp freshly brewed strong coffee 1/2 cup (135ml) nonfat Greek yogurt*** 1/4 cup mini semisweet chocolate morsels 1/4 cup chopped walnuts (optional) Method: Preheat oven to 180C. Line an 8x8" tray with parchment paper or lightly grease the tray. Sift flour, cocoa powder, salt and baking powder together. Set aside. With an electric mixer, cream butter and sugar until light and fluffy. Add in egg, egg whites, vanilla and coffee. Beat until incorporated. Scrape sides of bowl down with a spatula. Turn mixer to low speed and slowly add flour into mixture, followed by yogurt. Mix gently until combined. Batter will be thick. Stir in chocolate and walnuts if using. With a spatula spread mixture evenly in the prepared pan. Bake for 20-25mins or until skewer comes out clean. Cool on a wire rack before removing from pan. ~|Notes|~ *reduced sugar to 120g was just nice for me **used one whole egg instead of two egg whites ***used one tub of low fat yogurt related searches : Santa
