Sausages with Caramelized Balsamic Sweet Onion and Tomatoes and Sumac Potatoes
Whew, that was a mouthful of a title. This was a nice simple weeknight meal but delicious all the same. I prepared the potatoes ahead of time by refrigerating them after boiling them until I needed them.Sausages with Caramelized Balsamic Sweet Onion and Tomato (Adapted from the latest Super Food Ideas) 2 Seitan Sausages per person (I used Tami's Smokey one's I keep posting about) 125g Baby Tomatoes per person 1/2 a Red Onion, sliced, per person 1/2 Tbsp Balsamic Vinegar, per person Plop a glug of Olive Oil (yes, this is a super scientific recipe ;)) in a frying pan over medium heat and fry the onion for 10-15 minutes or until it's nice and caramelized. Add the balsamic vinegar and tomatoes and cook for a further 5-10 minutes or until tomatoes soften and start to collapse. Meanwhile fry your sausages in a non stick pan until heated through. Serve sausages covered with tomato and onion mixture. Sumac Potatoes (From Ready Steady Cook) Feeds 2 Adults and 3 kids 6 medium Red Potatoes, cut into small cubes (I halved the potato, then cut each half into thirds and then into small cubes) 1 Tbsp Oil 1 Tbsp Margarine Pinch Salt 2 tsp Sumac Boil cubed potatoes for 10-15 minutes or until just tender. Drain and run under cold water. If you want refrigerate until you're ready to use them. Heat oil in a non stick frying pan and add potatoes. Cook for 5-10 minutes and add margarine. Cook for a further 5 minutes, season with salt and add Sumac. Serve hot. related searches : Sausages
