Sauteed Yellow Squash
INGREDIENTS 2 Large Yellow Squash RECIPE Mince garlic, chop squash into 1/2 inch semi-circles, and cut onion into 1-2 inch long 1/4″ strips. Set aside. In a large non-stick skillet heat oil over high flame (if using a regular pan double the amount of oil). Add garlic and saute quickly (less than a minute). Add squash and onions, salt and pepper to taste. Saute until onions become translucent (about 2-3 minutes). Serve as a vegetable side dish with almost any main course you can think of.
