Saved by the mag.

I was a worthless bum when I got home from work today. I’m thinking my normal lack of sleep plus Sunday’s half marathon finally caught up with me.  I came up home and fixed coffee, however, I still couldn’t keep my eyes up.  Sheesh!  So I layed down on the sofa for a 30 minute power nap and woke up 2 hours later.  Whoops. ;)


Russell and I were just about to go out to eat tonight [it seems to be our Wednesday night trend] when I checked the mail and found this…..



Flipping through this magazine, I was quickly reminded of my health and fitness goals.  And while I can make healthy choices in a restaurant, not knowing ingredients, I can’t make clean eating choices.  I nixed eating out and headed to the kitchen.


I need the Clean Eating magazine to arrive in my mailbox every single day!!  I guess I was saved by the mag.  ;)


While I didn’t fix any of the recipes out of the magazine, I still fixed a clean eating dinner that was delish!!



This dinner also included the creation of a new recipe!


Sassy Sweet Potato Fries    [these are sweet & spicy!!]



1 large sweet potato, cut into fries
1 tbsp olive oil
1 tsp organic brown sugar
1/2 crushed red pepper
1/4 tsp paprika
1/4 tsp chili powder
sea salt to taste

Directions:


1) Preheat oven to 400F.  Wash sweet potato.  Cut into fries.


2) Toss fries in large Ziploc bag with remaining ingredients.


3) Spread fries evenly on a baking sheet, and bake for 30 minutes turning halfway through.



While the fires were baking, I created a random sandwich on a garlic clove petite loaf of bread including:



romaine lettuce
feta cheese
dried cranberries
chicken breast [cut up and cooked on the stovetop]
basil pesto


For a very random, thrown together dinner….it was really tasty!!


I was thankful for the arrival of my Clean Eating magazine today…..it spurred the making of a delicious dinner and even motivated to clean out and organize my pantry.
