White Chocolate Cheesecake


I’m such a huge fan of cheesecake. This one in particular has all the right elements to rock your world. When I first tried the recipe, I was skeptical of the large amount of cream cheese in it, but somehow the white chocolate and whipped cream counteracts it in a way that can only be described as amazing. Add the butterscotch chips and the fantastic crust and you’ve got a little slice of heaven.


You could also top it with fruit instead of the butterscotch/toffee chips; I think some sliced strawberries would go really well with it. Give it a try!


Decadent White Chocolate Cheesecake


Yield: 8 servings | Prep time: 0:30 | Wait time: 1:30 | Total time (est.): 2:00


Ingredients for Scrumptious No-Bake White Chocolate Cheesecake:



1 1/2 cups finely crushed graham crackers
1/4 cup sugar
1/2 cup melted butter
1 cup white chocolate chips
2 pkgs (8 oz. each) cream cheese, softened and cut into chunks
1 cup whipping cream
2 tbsp powdered sugar
1 tsp pure vanilla extract
1/2 cup mini butterscotch or toffee chips

Instructions:



Put a medium bowl in the fridge to chill it.
Mix together graham cracker crumbs, sugar, and melted butter in a medium bowl.
Press into a pie tin and put in the freezer for 30 minutes.
Melt the chocolate chips in the microwave on 50% power for 30 seconds, mix, and repeat.
Keep microwaving at 30 second intervals until completely melted, but not enough that the chocolate seizes and gets hard.
Stir in the cream cheese, and mix until smooth.
Mix the whipping cream with the powdered sugar and vanilla extract, then beat at high speed until soft peaks form.
Fold into the white chocolate and cream cheese mixture.
Pour the mixture into the pie crust.
Sprinkle with butterscotch/toffee chips.
Cover and chill until set (4-5 hours in the fridge, or 1 hour in the freezer).
Enjoy! Try not to eat it all at once.
