Sea Salt Caramel Brownies

Good Evening!

I can't believe that it is almost 7:00pm, this time change stuff has got me a little off schedule already.  We have had a very busy but fun day and one of the highlights was making Sea Salt Caramel Brownies with my daughter Zoe.

I have had two failures making the caramel sauce and ended up not making these fabulous browies but the third time was a charm.  I bought real sugar not evaporated cane sugar and I used a cast iron skillet to make the caramel sauce which is the key to the whole magnificent brownie!

So instead of Whoopie Pies, I ended up making Sea Salt Caramel Brownies because as my husband put it my ego was bruised when I FAILED making the caramel sauce.  You better believe my ego was bruised.  I have been baking for quite some time now and I could not believe that such a simple recipe for caramel sauce was not turning out.  Ah... but it all came together today and I am here to report that they decandant brownies are worth every little calorie.

The ooey gooey caramel sauce combined with the fudgie brownie and a touch of sea salt to balance everything out made for a FREAKING amazing brownie experience.


I got the recipe off of slashfood.com. under Mari Tuttle's Caramel Sea Salt Brownies.

Caramel Sea Salt Brownies

1 stick (4 oz) unsalted butter
4 oz unsweetened chocolate
2 large eggs
1 cup sugar
1 teaspoon vanilla extract
3/4 cup unbleached flour
1/2 teaspoon salt
1/2 cup caramel sauce, warmed*
1/4 teaspoon sea salt, preferably fleur de sel

Preheat oven to 350ยบ. Grease an 8 x 8 square pan. Line with parchment; grease again.

Sift flour; measure; resift with salt.

Over double boiler, melt butter. Once melted, add chocolate; stir until melted. Remove from heat.

With hand or stand mixer, whisk eggs, sugar and vanilla extract together until fluffy and light in color; add chocolate mixture; mix until combined; fold in flour.

Pour half the batter into pan; smooth top; pour half the caramel sauce over mixture; smooth evenly; pour remaining batter over caramel; smooth top again. Drizzle remaining caramel sauce over top, in one continuous zig-zag pattern. Turn pan 90 degrees; with toothpick, drag tip through top caramel and batter layer making same zig-zag pattern. Bake for 20 minutes, turn pan and bake for 15 minutes more.

Remove from oven and sprinkle sea salt on top. When cool, cut into squares or bars. Enjoy!


Caramel Sauce for Mari Tuttle's Caramel Sea Salt Brownies

1-1/2 cups sugar
1/2 cup hot water
1 tablespoon butter
1/4 teaspoon salt
1 teaspoon vanilla extract

Pour sugar into heavy skillet and caramelize over low heat; constantly stirring until it has completely melted and is light brown in color.

Remove from heat and very slowly stir in hot water. Don't worry if sugar clumps, it will melt again when you reheat the mixture.

Return the pan to medium heat; stirring to melt sugar clumps. Mixture will begin to boil. Continue boiling until mixture thickens and the boil isn't as rapid.

Remove from heat; add butter, salt and vanilla. Strain if there are remaining sugar clumps.

Yield: 1 cup

Hubby needed to work today so that he can enjoy our trip to Portland later this week so the kids and I went to the Brittany Tuck Benefit today.  Mrs. Tuck is Zoe's 2nd grade teacher and Brittany Tuck was her daughter who died in a tragic car accident.  To help with the grieving process Mrs. Tuck and her family have a benefit every year to help fund scholarships for young athletes graduating from Lake Travis, Dripping Springs and Dayton High Schools in honor of her daughter.  We went to Camp Ben where there was live music, BBQ and a Moon Bounce for the kids. 

I just learned about this this past week and am saddened and inspired by the whole situation.  Mrs. Tuck has handled this terrible loss with grace.  It was great to see her today as well as honor her daughter.  One of the the cute things I learned was that Brittany had a secret dragonfly tattoo on her foot that her family did not know about until her autopsy.  Since then the whole family has gone out and gotten dragonfly tattoos in memory of her and I now have noticed that Mrs. Tuck's room at school is filled with Dragonflys. 

It was a gorgeous day and the kids and I also went on a bike ride today.  I needed to burn a few calories in anticipation of eating the Sea Salt Caramel Brownie!

I started off the day with my beloved PB& Banana on Ezekiel English Muffin.  I just never seem to tire of this meal.  Oh so good.



Lunch was a Greek Berry Salba Bowl.  I was not in the mood for BBQ so had a quick bowl before heading to the benefit.



I also had had a few licks of the caramel and the brownie batter so wanted something light for lunch.

Dinner was a quick Won Ton Soup.  My kids are absolutely in love Annie Chun products and I have to say they are a quick and easy way to whip up a healthy dinner.


I bought a bag of the Annie Chun's Chicken & Cilantro Mini Wontons and made Wonton Soup in less that 10 minutes.



Chicken & Cilantro Wonton Soup

1 container of low-sodium chicken broth
1 bag of Annie Chun's Chicken & Cilantro Mini Wontons
2 scallions, chopped
sea salt, to taste 
Bring the chicken broth to a boil in a medium sized pot.  Add the frozen wontons and cook for 1-2 minutes.  Top with scallions and sea salt.

Enjoy! 

This  was  super filling and light at the same time.  4 mini wontons only have 50 calories and chicken broth is very low in calories so you can enjoy a nice serving of soup for under 200 calories.  And my kids love this!

I am off to play with the kids + dog outside before the sun goes down.  I hope you all had a great weekend and I will check back tomorrow.
