Seasonal Club Menu at L'Atelier de Joël Robuchon, Las Vegas
During cocktail and hors d'?uvre hour with fellow coworkers, everyone was discussing their late dinner plans. Twist by Pierre Gagnaire. Eiffel Tower Restaurant. CUT. Some skipped dinner to relax at a lounge and drink the night away. We excitedly exclaimed L'Atelier de Joël Robuchon, which was met with awkward expressions...
L'Atelier de Joël Robuchon and The Mansion is located next to each other. The Mansion has shut opulent doors at the entrance. L'Atelier has a hostess positioned outside the doorway which exhibits a much more inviting atmosphere. We were seated at the bar - the best seats in the house as it was fun to watch each chef perform their specific job over and over again. The bar area allowed patrons to interact with each other, commenting on food and life. There were a couple of single diners at the bar as it easily yields to eating alone.We were greeted with the menu - choices of a la carte, the $85 Spring Club Menu and the $168 Discovery Menu. The chef indicated there were no restrictions as we could mix and match until our hearts content. We settled on the Spring Club Menu and the Discovery Menu - which I'm separating into the next blog post. Club Menu L'Amuse-Bouche Avocado and cilantro flavored grapefruit gelee ... La Tomate Chilled tomato gazpacho with croutons ... La Langoustine Crispy langoustine fritter with basil pesto ... Le Saint Pierre John Dory filet a la plancha with baby octopus ... Les Fromages ... Les Tartes Traditional tarts The bread basket included house made pain de epi and flaky cheese bread similar to a croissant. The amuse bouche, avocado and cilantro flavored grapefruit gelee was presented like a little present. I secretly hoped for the foie gras parfait. The amuse reflected the ingredients in season. Scooping the ingredients together in one swoop - bitter quality of the grapefruit and creamy avocado worked better together. The chilled tomato gazpacho was straight forward. The soup will chilled to the very last drop thanks to the pretty cocktail-like presentation.
![]() Langoustine is one of my favorite crustaceans but it often overcooked making it dry and mealy. I usually cook it with a lot of butter to prevent the dryness. However, the langoustine wrapped in crispy wrapper was still juicy with a dab of basil oil to pick up the crustacean. ![]() The John Dory fish was nice and light, tender and so was the octopus. There are so many times I'm fighting down a rubbery octopus. The dish was light and a bit lacking in flavor but a good transition to our cheese course. The John Dory came with Robuchon's signature mashed potatoes. I was looking forward to the potato since one of my favorite bloggers, Uhockey praised the dish and technique. Unfortunately, it might have been the potato itself but it was extremely gummy instead of smooth. The signature mashed potato recipe is available here, I'm hoping to make it soon to see if I get the same results. ![]() The cheese course had a soft ripe cheese, a brie and sheep milk selection served with a raisin, walnut and country bread. ![]() ![]() The dessert course was a choice between tarts or sorbets. The tart flavors ranged from nutty, chocolaty to citrusy. ![]() MGM like Taste of the Wynn offers prix fixe options for all of their restaurants since the economy went down the drain. However, there are signs of recovery since the prices have increased. The Mansion increased all of their prix fixe by $20 (excluding the degustation meal.) The seasonal club menu recently increased by $10 and discovery menu by $20. If you are staying at the MGM hotel check out their Prima package.
