Seasonal Eating
Hi guys! Thank you all SO very much for all the wonderful comments regarding the big 1 year! I can’t wait for many many more!! Around 4:30 I headed over to the gym for some cardio. I did my usual circuit—15 minutes running on the treadmill (5.5), 15 minutes cycling and 10 minutes on the elliptical. It felt great to get sweaty after a long (sick) weekend of no exercise! And I blasted about 380 calories. Woop woop! When I got home I was craving eggs so I made an omelet for dinner. But it wasn’t just ANY omelet….it was a delicious 1 egg + 1 egg white spinach and garlic omelet with laughing cow. Here’s what you do— Spray a small nonstick pan with pan spray and set the heat on medium. Saute a minced garlic clove for about 30 seconds and then add two huge bunches of spinach: When the spinach starts to wilt, crank the heat to high and add your beaten egg + egg white (with a little salt and pepper): Let cook for about a minute (and douse with hot sauce if you are like me) and then fold the omelet inwards and smoosh the laughing cow in between: Let cook for another minute to let the cheese melt in the middle and then serve! I served mine with two slices of Ezekiel cinnamon raisin bread, toasted and smeared with butter and sprinkled with “gingerbread sugar” (a combo of sugar, cinnamon, ground cloves and ground nutmeg): Now that’s a comforting winter meal! I cleaned up and read for awhile before going back for dessert. I made another cookie plate with my Williams- Sonoma gingerbread cookies and added a special chocolate seashell that Betty brought me home from their cruise! I sipped on sugar cookie tea with agave, of course. Its like a little Christmas dessert feast! I love it! Back to my book and bed! Have a great night, folks! related searches : Seasonal
