Sesame&Spices Flat Breads

Just another flat breads prepared especially for me beloved husband.
Kolejne plaskie chlebki, ktore wykonalam na zyczenie mojego meza. Ciasto robi sie prawie samo i mozna je przechowywac w lodowce przez dobe i wypiekac porcjami na patelni, kiedy tylko mamy ochote.

Dough: /Ciasto
290  starter (refreshed overnight, mix of   the  rye and wheat, 100%hydration)/zaczynu zakwasowego (moj byl poloczeniem zytniego i pszennego)
292 g water/wody
500 g white whole wheat flour/bialej maki pelnoziarnistej
Mix the ingredients and set aside for 15 minutes. Add 9 g salt and work it through the dough. Let ferment for 4 hours./ Wymieszac skladnik i odstawic na kwadrans. Dodac 9 g soli. Fermentowac przez 4 godziny.

Sesame and Spices:/ Sezam z przyprawami
1/4 cup sesame seeds (mix o black and white)/ 1/4 szklanki sezamu (u mnie mieszanka bialego i czarnego)
1/4 teaspoon each:

 dried rosemary, thyme, oregano;  ground: caraway seeds, coriander; marjoram leaves, cumin, sweet paprika powder and salt/ po 1/4 lyzeczki nastepujacych przypraw:
  suszonego rozmarynu, tymianku,oregano; zmielonych ziaren kolendry, kminku; majeraneku, kiminu, slodkiej  papryki w proszku i soli.
Combine the ingredients and roast them slightly./ Wymieszane skladniki uprazyc lekko na patelni.


Add roasted sesame and spices with 2 tablespoons of olive oil to the dough. Let ferment for two hours.Roll a piece of dough in a ball. Reheat your skillet. Flatten the dough using your fingers.Place the breads over skillet. After breads start changing color and start puffing in different places flip them over.
You can keep the dough refrigerated for 24 hours.
Sezam uprazony z ziolami dodac wraz z 2 lyzkami oliwy do ciasta. Zostawic na 2 godziny do fermentacji. Rozgrzac patelnie. Kawalek ciasta rozplaszczyc na powierzchni oproszonej maka. Piec z obu stron. Ciasto mozna przechowywac w lodowce przez 24 godziny - w tym czasie bedzie jeszcze powiekszalo swoja objetosc.
