Shepard's Pie, a simple thing
As I expected, my 1.4 pound loss last week has returned. I knew being sick would mess with the scale. That and not being able to exercise for 2 weeks now. I feel 95% now and plan to resume my workouts. They will be held indoors now cause I'm a baby and do not go out when it's cold.
And the all hahahahahahahahahahahahahahahahaha! Sorry. But it is cold and rainy and I will be spending quality time inside with my old friend, the e-machine. Now that I have almost returned to the realm of the healthy, my DH has joined the realm of the sick. I made him a pot of chicken soup but he declared it too spicy Sometimes when you're sick you just want something else. Sometimes you just want something other than soup that's comfort food. I made Shepard's Pie for him and he was so happy. It's all cheesy and mashed potatoey and corny and beefy. All the comfort foods layered into one pan. He was so excited when he saw it on the counter. "Is it?.... Is it?.... Oh my gosh! It is! You haven't made this for a while!" "My favorite! Thank you! Thank you" So much gushing! If I would have known this sooner I'd have made a Shepard's Pie for him instead of giving birth! The current version of Shepard's Pie has come a long way from it's full fat ancestor. Shepard's Pie 1 pound lean ground beef, browned 1/2 onion, chopped 4 medium sized potatoes, peeled and quartered 1 cup stock 2 cups fresh or frozen corn kernels 1 cup reduced fat cheddar cheese, grated salt and pepper, to taste Brown ground beef with onion. Boil potatoes in water till soft, drain water and mash with potato masher adding stock until mashed potato consistency. Spread ground beef mixture in the bottom of an 8x11 inch pyrex dish Spread mashed potatoes over beef layer Spread corn over mashed potato layer Spread grated cheese over corn layer Bake in 350 degree oven for 25-30 minutes or until heated through and cheese is melted makes 4-6 servings Mashed potatoes made with stock instead of milk and butter?
