Shrimp on the Barbie
Tuesday-weigh in day- down 3 pounds! woot! woot! That one deserves a double woot! I'm still in the test kitchen this week. I want to enter another food contest. This one is a local cookie contest so I'm making lots of different cookies but I am tasting 1 only and giving them out to my taste test panel and friends. So far so good! And I think I've found the recipe I'm going to use. Test kitchening it this afternoon. If it's a go then I take mah-velous pics and share. Stay tuned! ![]() There is still lots of zuccini squash available at the grocery. I love grilled zuccini! One night recently I was in a quandry for what to make for dinner. I wanted some grilled zuccini squash, but what to have with it? hmm.... I took stock of the pantry. I took stock of the freezer. I took stock of the frig. I found shrimp, corn tortillas, onions, red and yellow bell peppers. Dinner! First I sliced the squash and peppers and marinated them with EVOO, balsamic vinegar and salt and pepper. Then the shrimp got cleaned and de-veined and tossed in a bag with some EVOO and Old Bay seasoning. Into the frig for about an hour they all went. Then as the grill got hot, I sliced the onion into thick slices. Then the fun began! Everything got put on the grill. Even the tortillas! Shrimp tastados! Nuff said!
