Shrimp Tacos with Cabbage, Mango, and Red Onion Salad

Being the ? genius ? that I am, I forgot to turn my camera off last use, and ended up with a ? dead battery ?.  So.....no pictures.  But, I do have one of an ugly puppy.
 How's that work for you?




Anywho, the dinner was fantastic.  The Chef's parents are in town, so I had 4 people that agreed with was great.  The favorite part seemed to be the pickled red onions, which makes sense.....since they are pickled red onions.  Nuff said.




On to the recipe.  There are 3 parts.  The shrimp, the salad, and the dressing.




The salad should be first, since you need cooling time.


1/2 had of cabbage, shredded
1 mango, sliced thin
1/4 cup cilantro, chopped
2 red onion, pickled
To pickle the red onion, put 1/2 cup of sugar, 1 cup apple cider vinegar, and sliced onion into saucepan.  Bring to a boil, stirring.  Let cool.  Transfer to a bowl, and cool in the refrigerator (or freezer, depending on time constraints). Add ingredients in large bowl, and drizzle with dressing (see below)




For the Dressing
2-3 shallots, sliced
3 tbsp maple syrup
1 tsp cumin
3 tbsp white wine vinegar
1/4 cup vegetable oil
2-3 tbsp lime juice


Add shallots, syrup, cumin, and vinegar to saucepan.  Bring to a boil and reduce approximately by half.  Let cool.  Transfer to blender or food processor.  Puree for 30 seconds.  Add lime juice.  Leave the processor on, while drizzling oil in.  Dress salad.


For the shrimp


1 lb shrimp, deveined and shelled
1/2 cup of you favorite barbecue sauce.  Or go for hot sauce if you want spice.
1 garlic clove
2 serrano chiles, chopped (if you want spicy)
shredded cheese


In a skillet, add 1 tbsp olive oil.  Add garlic and shrimp.  Saute for 3 minutes.  Add barbeque sauce, simmer for 2-4 minutes, or until shrimp is cooked thoroughly.


Serve with flour or corn tortillas.  I choose to put the salad in the taco.  It can be a side if you prefer.




And since I am one handy, thrifty girl.  My lunch today consisted of a toasted everything bagel, with light cream cheese and the pickled red onion, cabbage, and mango salad on top.
